Text to me can be anything that has a purpose. This could even spread out to music or vocal sounds and also images. Pictures or ads are texts. I like to think about how ads as texts are rhetorical. Ever since I had to create an ad for a class project, I have been interested in how ads can have rhetorical insights. Everything that goes into advertisements help to illustrate the meaning and purpose to the them. Color, actual written text, and the way words are ordered are all ways that this form of a "text" is rhetorical. The ALT reading on texts refers to the different aspects of argument in how texts are created. Just as a writer would look at their argument, style, and audience, so would someone working in Advertising.
(Comment with what you think text is.) :)

An alligator stalking an egret has a purpose, but I would not extend the definition of "text" to include this behavior. Your examples all involve some kind of symbolic representation. This might be a key to your own definition. --Dr. L
I consider text to be anything that explains or presents something, usually a theme or a topic for the purpose of considering that theme or topic. I think this extends from written (like books/stories), to visual (like a movie), and verbal (like music). Ultimately, they all contain words, though, so I'm not sure if they count as different kinds of texts. There's for reaching!
Glad you pointed that out. I was a little broad with my definition. I honestly did not know exactly where I was going with it. I think I was hoping others would write in and point out my flaws. I actually agree more with Monica on what a text is. Getting to that point was the problem. Thanks for comments!
